- 2 cup self-raising flour sifted
3/4 cup brown sugar
1 egg lightly beaten
3/4 cup buttermilk
1/2 cup vegetable oil
150 g mixed berries
- 1/4 cup brown sugar firmly packed
1/4 cup shredded coconut
1/4 cup plain flour
50 g butter
STEP 1 Preheat oven to 180C. Grease muffin tray.
STEP 2 Combine flour and sugar in a large bowl.
STEP 3 Add egg, milk and oil, stir until just combined.
STEP 4 Add berries to mixture, fold in lightly. Spoon mixture into prepared pan.
STEP 5 Topping: Combine sugar, flour and coconut in a small bowl.
STEP 6 Rub in butter. Sprinkle over muffins.
STEP 7 Bake for 20 minutes.
